Soft Sugar Cookies

Zac made these last night.  They are his favorite to make because he loves sugar cookies but doesn't want to take the time to roll and cut.  He is becoming quite the cook :)


2/3 cup shortening
2/3 cup butter
1 1/2 cups white sugar
2 eggs
2 tsp. vanilla extract
3 1/2 cups flour
2 tsp baking powder
1 tsp salt

Preheat oven to 350.

In a mixing bowl, cream together butter, shortening and sugar.  Stir in the eggs and vanilla.

Combine the flour, baking powder and salt.  Add to the creamed mixture.  Mix just until the dough comes together.  Drop scoops onto an ungreased cookie sheet.

Bake for 10-12 minutes (until bottoms are lightly browned).  Quickly take a cup and press the cookie flat.  Let cool for just a minute on the sheet and then remove from cookie sheet to cool.

They are good plain or you can even roll the cookies in sugar before you bake them.  We love to put butter cream frosting on them.
